  • Goat cheese in French is chevre.
  • It’s common for goat cheese makers to coat the cheese with ash, often made from vegetables.
  • It’s easy to make goat cheese from goat’s milk.
  • The fat molecules in goat’s milk are smaller than in cow’s milk. That’s what makes it more friendly to the lactose intolerant.

    Any idea of whether feta is made of goats cheese? I personally prefer cheeses that are well aged.
